Captain Fanis taught us to respect what the Greek sea offers. We remember that when he caught a fish that he didn't want, he threw it back into the sea. But when he was preparing the botargo, he did it with a unique passion that now we understand was the most rigorous production process, because he respected each egg and treated it as something unique and special.
